La philosophie du domaine dujac
The style of wines must be elegance and finesse, with supple and well integrated tannins. The search is for equilibrium, harmony, length and complexity! This is why the grapes are vinifed with little or no destemming, Jacques being convinced that experience has shown that, despite certain inconveniences, such as loss of color, this give the wines greater complexity.
His style is influenced by his great respect for Burgundy's terroir. His complete trust in the terroir means he tries interfere as little as possible in order to allow the fruit to fully express itself and its origins. Burgundy made great wines far before the arrival of oenology and modern equipment. Experience, knowledge and technology are here to help us remedy the imperfections of the year, but if all is well there is no reason to tamper or intervene.
The quality of the grape is the starting point for a good vinification. Work in the vineyard is the key to a good wine. We have the good fortune to have a big team, capable of excellent technical and rigorous work. Domaine Dujac may own five Grand Cru, but whether it be Village, Premier cru or Grand cru we make the same effort in quality for each. From 1986 the Domaine has been in "lutte intégré". This viticultural regime allows us to combine practices from organics, biodynamics and IPM as appropriate to the climactic conditions and status of the vine. The result of these meditated choices in the vineyard is minimal treatments, an active and living soil and vines that work to seek nutrients. The objective is simple: allow the vineyard to produce the best possible grape in optimal condition whilst preserving the organic balance and integrity of the land.
